Strawberry Crinkles

These are super easy, mostly because we’re going to cheat a little.  Or, if you prefer, employ a “baking hack”.

Whatever you call it, these are simple, colorful and full of fruity goodness!

Ingredients

  • 1 box, strawberry cake mix
  • 1 tub, Cool Whip
  • ½ cup chopped strawberries
  • Powdered sugar for dunking

Directions

Like it says above these are super easy!

Empty your strawberry cake mix into a bowl and add the tub of Cool Whip.  IMG_6705Mix with a wooden spoon until well blended.  It will be very pink and smell like Duncan Hines’ idea of what a strawberry smells like (but don’t let that deter you!)IMG_6707

Chop up strawberries into tiny bits until you have a half cup full of tiny bits of strawberries.  These should smell like actual strawberries…if they don’t something is terribly wrong because they should be, in fact, actual strawberries.

I used defrosted strawberries because I already had some in the freezer, but you can also use fresh.

Fold the strawberries into your dough.IMG_6708

Get a smallish bowl and add a bunch of powdered sugar to it.  Make golf ball-sized dough balls and dip each ball into the powdered sugar, covering it completely.

Place the dough onto cookie sheets lined with parchment paper, 6 to a sheet.  IMG_6709Bake at 350 for 10-12 minutes, until the cookies have puffed up a bit.  Take the cookie sheet out of the oven and let it sit for about 5 minutes, then transfer the cookies to a wire rack to cool completely.IMG_6711

Makes about 18 cookies filled with strawberry goodness!IMG_6722
