Peppermint Bark

Peppermint desserts are kind of required around the holidays, right?  Well, I’ve always been kind of a rules follower, so here’s my version of the classic Christmas candy!  Super simple and really delicious.

Ingredients

  • 3 ½ cups semi-sweet chocolate chips
  • 2 T butter
  • ¾ cup peppermints or candy canes (I didn’t have candy canes, so for this one, peppermints it is!)
  • 3 ½ cups white chocolate chips
  • 1 t peppermint extract

Directions

No oven needed for this one (ok, maybe the microwave)

Melt together the semi-sweet chocolate chips and the butter – here’s where the microwave comes in handy.

Cover a cookie sheet with parchment paper and spread the chocolate onto the sheet, almost to the edges.  Take the sheet and put it in the fridge for about a half hour to cool and harden.IMG_2213

While the chocolate is cooling, take your candies, put them in a zippered plastic bag and whack the hell out of them with a hammer to crush them.  Especially around the holidays it’s a fun, constructive way to get out a little aggression.  Set this aside.IMG_2215

Next, melt the white chocolate chips (microwave again).  Stir in the peppermint extract and spread the melted white chocolate over the hardened semi-sweet.

 

While the white chocolate is still hot, sprinkle the crushed candy over it and place the cookie sheet back into the fridge for another half hour or so.

Once everything is hardened, break the candy into pieces, serve and enjoy!
