Homemade Mounds Bars

I’ve said on here a few times that I’m not really a candy guy – I usually go for cakes and cookies and the like.  But every once in a while I will get a candy craving and if I’m out I’ll usually buy a Mounds bar and that definitely does the trick.

So I thought – could I make them at home too?

Yes, yes I can.  And so can you, and…it’s pretty simple!

Ingredients

  • ¼ cup coconut oil
  • 2 ¼ cups sweetened, shredded coconut
  • ¼ cup honey
  • ¼ cup coconut milk
  • 1 t vanilla
  • 10 oz dark melting chocolate

Directions

Put the coconut oil in a small bowl and microwave on low, taking it out and stirring frequently, until it’s melted (you can also do it on the stovetop).

Pour your shredded coconut, coconut oil, honey, coconut milk and vanilla into a bowl and mix on low for a couple minutes until everything is well combined.  FYI, adding the vanilla adds a nice little extra bit of flavor, but it also adds color to the mixture.  If you’re intent on more closely mimicking the look of a Mounds bar, you can omit the vanilla.IMG_5869

Get a loaf pan and line it with parchment paper.

Pour your coconut mix into the pan and press it down lightly with your fingers to get it even then put the entire pan into the freezer for about 2-3 hours.  Go reward yourself for a job well done (but not quite done).IMG_5870

When you’re ready to finish them, get your dark melting chocolate and do what you’re supposed to do with melting chocolate and melt it.

Line a baking sheet with wax or parchment paper.IMG_5886IMG_5887

Take the pan out of the freezer, lift the coconut out by the parchment paper and cut into bars.  Dip the bars in your melted chocolate and move them to your baking sheet.  When you’re done, put the baking sheet into the fridge to let the chocolate harden (probably an hour or so), and you have about 14 homemade Mounds bars!IMG_5891
