Banana Maple Bread with Chocolate Chips

Ok, I’ll be honest here – I just threw in a bunch of things that I like into a bread/loaf cake mixture because I just wanted to enjoy those flavors.

Spoiler alert – it really, really works.  This is simple and completely delicious!

Ingredients

  • 1 2/3 cups flour
  • 1 ½ t baking soda
  • 1 t cinnamon
  • ½ t allspice
  • 3 T dark brown sugar
  • 1 egg, brought to room temperature
  • 2 ripe bananas
  • ½ cup maple syrup
  • 3 t vanilla
  • 1 cup + 2 T semisweet chocolate chips
  • 1 T sugar

Directions

Butter and flour or spray a loaf pan and set it aside.

In a medium bowl, pour the flour, baking soda, cinnamon and allspice and whisk together until well combined.  Set this bowl aside.

In a large bowl add the brown sugar, egg, bananas, maple syrup and vanilla and mix until well combined.  IMG_6745Add in your dry mixture and mix again until just combined.IMG_6746

Pour in the cup of chocolate chips and stir until the chips are evenly distributed throughout.IMG_6747

Pour the batter into your prepared loaf pan.  Sprinkle the sugar along the top, then sprinkle the remaining 2 T chocolate chips over that.  Bake at 350 for 30-40 minutes, or until the top is a nice golden brown and a toothpick inserted in the center comes out dry.

Take the pan out of the oven and move it to a wire rack to cool completely.  Once it’s cool remove it from the pan, slice and enjoy!
