Old Fashioned Donut Loaf Cake

Obviously, I like dessert.  But I’m also someone who very much likes desserts that aren’t super, overly sweet.  For instance, instead of say, a cream filled donut, I love a plain old fashioned donut.  No filling, no icing, just a crunchy cinnamon sugar topping.  Even as a kid, those were my favorite kinds of donuts.

Well, this isn’t a donut recipe but it’s kind of the next best thing – the old fashioned donut, fashioned (get it?) into a loaf cake.

Ingredients

  • 3 cups flour
  • 1 ½ cups sugar, separated
  • 3 t baking powder
  • 2 t nutmeg
  • 1 ½ t cinnamon, separated
  • ½ t salt
  • 2 eggs
  • 1 ¼ cups milk
  • ¼ cup sour cream
  • 2 t vanilla
  • ¼ cup butter

Directions

This is my favorite kind of recipe, especially if you’re in a bit of a rush.  Just one bowl!

Start by spraying or butter and flouring a loaf pan and set that aside.

In a large bowl whisk together most of your dry ingredients: flour, 1 cup of the sugar,  baking powder, nutmeg, 2 t of the cinnamon and the salt.

Next, add in the eggs, milk, sour cream and vanilla and mix until everything is well combined.

Pour the batter into your prepared loaf pan and bake at 350 for about an hour, or until a toothpick inserted in the middle comes out nice and dry.

While your cake is baking, in a small bowl whisk together the remaining ½ cup of sugar and the remaining ½ t cinnamon and set that aside.

Once your cake is done take it out of the oven and set it on a wire rack.

Immediately (while the cake is still hot!), melt the butter and brush it over the top of the cake.  Get your cinnamon sugar and sprinkle that evenly over the top of the cake while the butter is still liquid.

Slice and serve – and enjoy how this tastes like one of those old fashioned donuts!IMG_8745IMG_8750
