Ingredients
Base
- 3 cups + 3 T flour, separated
- 1 cup sugar
- 4 t baking powder
- Pinch of salt
- 1¼ cup butter, brought to room temperature, separated
- 1 ½ cups milk
- 2 eggs
- 5 t vanilla, separated
- 1 cup dark brown sugar (it’s ok if your “cup” is a little more than a cup)
- 1 T cinnamon
Icing
- 1 cup powdered sugar
- 1 T milk
- 1 T butter, softened to room temperature
- 1 t vanilla
Directions
So if we’re keeping score here that’s THREE different types of sugar along with the cinnamon. C’mon – let’s do this!Start by spraying or butter and flouring a 13” x 9” pan. Set that aside.
In a large bowl whisk together 3 cups of flour along with the sugar, baking powder and salt until well combined. In a separate bowl mix ¼ cup of the butter along with the milk, eggs and 4 t of your vanilla until well combined. Pour your wet ingredients into your larger dry bowl and stir until just combined. You don’t have to use a mixer here, just a spatula or wooden spoon until everything is together.
Pour your batter into your prepared pan.
In a new bowl add your remaining cup of butter along with the remaining 3 T flour, the remaining 1 t of vanilla, your brown sugar and your cinnamon and mix until well combined.
Get a spoon and just gloop spoonfuls of the cinnamon mixture all around the top of the batter in the pan. For the uninitiated, “gloop” is a technical term that means plop.
Take a butter knife or the reverse end of a spoon and swirl the cinnamon mixture in with the batter.
Bake the cake at 350 for about 25 minutes or so, or until it starts looking a nice golden brown and a toothpick inserted comes out dry and clean. Take the cake out of the oven and move to a wire rack.
While the cake is still warm, make the icing by combining all the icing ingredients (powdered sugar, milk, butter and vanilla) and whisking until well combined.
Pour your icing over the warm cake and you’re done!
This cake is really, really tasty warm, but just as nice once it’s cooled. I say have it both ways!
