Ingredients
Chocolate Chip Cookie Layers
- 2 1/4 c flour
- 1 t baking soda
- 1 t salt
- 1 cup butter, softened to room temperature
- ¾ cup granulated sugar
- ¾ cup brown sugar
- 2 large eggs
- 3 t vanilla
- 1 bag (12 oz), semi-sweet chocolate chips plus an extra handful
- 1 cup butterscotch chips
Caramel Layer
- 1 can (14 oz) sweetened condensed milk
- 7 T butter, softened to room temperature
- ½ cup dark brown sugar
- 1 T maple syrup
- ½ t salt
Directions
Butter and flour or spray a 9” X 13” baking dish and set it aside.In a large bowl mix all your cookie ingredients except the chips. Then, add the 1 bag of semisweet chips (holding back the additional handful) along with the butterscotch chips.
Take half of this batter and spread it evenly along the bottom of your prepared baking dish and set both the dish and the other half of the batter aside.
Now on to making the caramel, which is as easy as making the cookie dough.
Put all your caramel ingredients into a small saucepan and heat on medium, stirring frequently, until everything is melted together and the mixture has just started to boil.
Pour this mixture over the cookie dough in the baking pan, then gently cover it with the remaining cookie dough. Sprinkle the remaining handful of semisweet chips along the top.
Bake at 350 for about 20 minutes or until the top is nice and golden brown. Remove from the oven and let the baking dish cool on a wire rack until completely cool. To make it easier to cut you can move it to the fridge for a bit (maybe 20 minutes) before cutting.
