Maple Blondies

As the days get shorter and the temperature gets a bit colder, I find myself revisiting some of my favorite flavors and looking for new ways to enjoy them.

Maple is definitely one of my favorites, and these blondies (also a favorite) work perfectly!

Ingredients

  • 1 ¼ cups flour
  • ½ t baking powder
  • ½ t salt
  • 6 T butter, softened to room temperature
  • ¾ cup dark brown sugar
  • ½ cup + 3 T maple syrup, separated
  • 2 t vanilla
  • 2 eggs, brought to room temperature
  • ½ cup semisweet chocolate chips
  • ½ cup butterscotch chips
  • 1 cup powdered sugar
  • 1 T + 1 t milk

Directions

Line an 8 or 9” baking pan with aluminum foil, spray with cooking spray and set aside.

In a small/medium bowl whisk together the flour, baking soda and salt and set that aside as well.

In a large bowl add your butter and brown sugar and mix until well combined.  Next add in the ½ cup of maple syrup and mix until just combined.  Then add in your eggs and again mix until well combined.

Get your bowl with dry ingredients and add that to your wet ones.  Mix until just combined – not too much.  Finally, add in your chocolate and butterscotch chips and stir until they’re well distributed.  This is your batter.IMG_0218

Pour your batter into your prepared pan and bake at 350 for about 20-25 minutes or until it’s a nice golden brown and a toothpick inserted in the middle comes out dry.IMG_0219

Move to a wire rack to cool completely.IMG_0221

Once it’s cool, remove the blondies from the pan via the aluminum foil, remove the foil and place the blondies on a sheet of parchment or wax paper.

In a small bowl, Add your powdered sugar, the remaining 3 T of maple syrup and the first tablespoon of milk and whisk until well combined.  You’re making a glaze and you want it to be a consistency where it’s drippable.  Add in the additional teaspoon of milk if you need to thin it out a bit (and, in contrast, if you need to thicken it up a bit, add a bit more powdered sugar).IMG_0222
