Strawberry Sauce

Ok, this one is a little different.  We had some baby cheesecakes in the freezer that we wanted to enjoy but weren’t really interested in having them plain.  The farmer’s market down the block from us has incredible strawberries right now.

So, I put together this recipe to liven up the cheesecake and take advantage of the great strawberries.  It’s not a full dessert recipe like my others,,

We used this recipe for cheesecake, but it’s also great on ice cream, pound cake and, well, whatever you think they might be great on!

Ingredients

  • 1 pound fresh strawberries
  • 1/3 cup sugar
  • 2 T water
  • 1 T cornstarch
  • 2 t lemon juice
  • 1 t lemon zest
  • 1 t vanilla

Directions

First off wash your strawberries, chop off the tops, hull them (basically just carve out the insides), and cut them in half.  Throw them all into a small or medium saucepan.

Now, just add in the rest of the ingredients – sugar, water, cornstarch, lemon juice, lemon rind and vanilla.

Turn the heat on to medium, and stir regularly.  You don’t have to do it continually, just enough so everything heats up and nothing on the bottom burns.

As the strawberries get softer, use your wooden spoon (or whatever you’re stirring with) to lightly mash them on the sides of the pot – this will help release some of the strawberry juice.

When the whole thing starts to simmer – basically starts to bubble around the edges – start stirring continually and do this for about 5 minutes, or until the mixture starts to thicken, before taking the pot off the heat.  It will continue to thicken as it cools.

This next step is optional – take ¼ to 1/3 of your sauce and put it into a blender and puree.  Then, add it back to the pot and stir it in so it’s incorporated.  All this does is increase the percentage of juice versus the percentage of strawberry pieces.

Once the mixture is cool enough, transfer it to an airtight container and refrigerate it until you’re ready to use it!  Note – if it gets too thick to pour after being in the fridge, just set it on the counter for about a half hour before using it.

Like I said, we used this on cheesecake, but you can use it on whatever you’d like!  As you can see, it’s super easy to make and it’s absolutely delicious.

And of course, since it’s fruit, it’s good for you.  I mean, right?
