Nutella Cookies

I gotta say, Nutella is one of those things that I never got the hang of – mostly because hazelnuts aren’t really my thing.  But, they ARE for other people.  And to those people…these cookies are for you!

Ingredients

  • 1 ½ cups flour
  • 1/3 cup dark cocoa powder
  • 1 t cornstarch
  • ½ t baking soda
  • Pinch of salt
  • 2/3 cup Nutella
  • ½ cup butter, brought to room temperature
  • ½ cup dark brown sugar
  • ½ cup sugar
  • 1 egg, brought to room temperature
  • 1 t vanilla
  • 1 cup chocolate chips (I used ½ cup bittersweet and ½ cup milk)

Directions

Whisk together the flour, cocoa powder, cornstarch, baking soda and salt in a medium bowl.   Set that to the side.

In a separate bowl, cream together the Nutella, butter, brown sugar and sugar.  Once that’s nice and smooth, add in the egg and vanilla and mix until combined.

Next, get your flour mixture and slowly add that in until that’s fully combined as well.  Finally, stir in all the chips until they’re well distributed.   Cover the bowl and chill it in the fridge for about an hour and use that time to clean up the mess you’ve made (if you’re anything like me).

Heat the oven to 350° and drop tablespoon-sized balls onto the baking sheets lined with parchment paper, six to a sheet, and bake for about 7-9 minutes.   But check as they’re cooking – you want them just starting to get a little brown on the bottom.

Cool on the baking sheet for about 5 minutes, then move the individual cookies to a cooling rack until they’re completely cool.

Makes about 3 dozen Nutella cookies!
