Baked Egg Nog Donuts

Egg Nog is one of those things that people seem to either love or really, really dislike.  I’m definitely in the “love” category, but only in small doses – it can be pretty overwhelming.

That’s why I like these donuts – you get the flavor of Egg Nog, but they’re not nearly as heavy as the actual stuff.  Try them and see what you think!

Ingredients

Donuts

  • 2 cups flour
  • ¼ t cinnamon
  • 1/8 t nutmeg
  • Pinch of salt
  • ¾ cup Egg Nog
  • 2 eggs, brought to room temperature
  • 2 T butter, brought to room temperature
  • 2 t vanilla

Icing

  • ¾ cup powdered sugar
  • 2 T + 1 t Egg Nog
  • 1 T butter, brought to room temperature
  • ½ t vanilla
  • Nutmeg for sprinkling

Directions

These are really simple, and we’ll keep the two parts to one bowl each.

In a large bowl add the flour, cinnamon, nutmeg and salt.  Whisk together until well combined.

Next, add in the Egg Nog, eggs, butter and vanilla and mix until everything is just combined (we want to keep these light, so don’t overmix!)

Get a donut pan and spray with non-stick spray.  Spoon the batter into the indentations, about ¾ of the way full.  Drop the pan on the counter a couple times, to even out the batter.

Bake at 400 for about 9-11 minutes, or until the donuts are a nice golden brown and soft to the touch.

Take the pan out of the oven and move to a wire rack for about 5 minutes, then take the donuts out of the pan and let them cool completely on the rack.

Once the donuts are completely cool, you can make the icing.  Remember, you want them room temperature or colder, otherwise the icing may slide off them.

In a small bowl add the powdered sugar, Egg Nog, butter and vanilla and whisk together until well combined.  If you find that the mixture is too thin for your liking, slowly add in more powdered sugar until you get to a good consistency.  If it’s too thick, add just a very little bit of milk.

Put a sheet of wax or parchment paper onto the counter.

Take your donuts and dip the top halves of them into the icing.  Move to the counter and sprinkle a little nutmeg on top.  You’ll want to sprinkle as you go, rather than once you’ve dipped all the donuts because you want the nutmeg to stick to the icing and it may not do that if the icing has started to harden.

Once the icing has hardened, move to an airtight container (you can refrigerate them if you like) until you’re ready to enjoy them.  And you will enjoy them!

Makes about a dozen delicious donuts!
