Red Velvet Cookies

Honestly, these are basically just a variation on a chocolate chip cookie.   But red.   Red-ish.  With some white chocolate chips in them. Because once you go red, you…I dunno where I’m going with that.   Well, you have another one because they’re really tasty.   Word of warning though – when you’re done your fingertips will probably be red.  It’s just an occupational hazard, but it’s worth it.   On the plus side this is super-easy

Ingredients

  • 2 cups flour
  • 1/2 cup cocoa powder – I prefer the sweetened but you can use unsweetened as well.   But it’s dessert (or at least a treat), so keep that in mind
  • ½ t baking soda
  • ½ t salt
  • 1 cup butter
  • 1 cup brown sugar
  • 1 large egg
  • 2 ½ t red food coloring (or more – the more food coloring, the more red they are!)
  • 2 t vanilla
  • 1 ½ cups semisweet chocolate chips
  • 1 ½ cups white chocolate chips

Directions

Combine the flour, cocoa powder, baking soda and salt.   Put it to the side.

In a separate bowl, use a hand mixer mix the brown sugar and butter, for about 3 minutes….until it’s kinda fluffy and light.   Add in the egg, the food coloring and the vanilla and beat again.   Next, add in the flour mixture until it’s all fully mixed.

Finally, stir in all the chips.   Cover the bowl and chill it in the fridge for a couple hours, or overnight.   Basically, you want the dough firm.

Heat the oven to 350° and drop tablespoon-sized balls onto the baking sheets lined with parchment paper.

This , by the way, is what happened when I handled the dough…  No, no one was actually harmed in the making of these cookies.

Cook for about 10 minutes, but check as they’re cooking – you want them just starting to get a little brown on the bottom.

Cool on the baking sheet for about 3 minutes, then move to a cooling rack until they’re completely cool.  Really good and really chocolate-y
