Are your cupcakes baked, but kind of flat? Want cupcakes that rise and look more like, well, cupcakes? It’s easy and you don’t even have to change your recipe.
If you’re finding your cupcakes are flat, lower your oven temperature a little, put a little more cake batter in the cups and let them cook for a little longer.
So, for instance, if you’re filling the tins up about 2/3 and baking them at 350 for 20 minutes but you’re not seeing what you like, then fill the cups 3/4 of the way and bake them at 325 for maybe 24 minutes (always watch your cupcakes). And there you have it! Fluffier, lighter cupcakes!
