Margarita Squares

Not all desserts are for children.  Actually, I could argue that NO desserts should be for children…they just make them hyper from all the sugar.  But I know that I’m going to lose that battle.

However, some desserts are specifically made for children to avoid and this is one of them.  Remember Jell-O shots in college?  This is essentially a classy version of those.

Plus it’s a way to enjoy margaritas without having to clean all those sticky glasses.

Ingredients

·        ½ cup tequila (cold)

·        2 packets of unflavored gelatin

·        2 ½ cups margarita mix

·        Sea salt to sprinkle

Directions

Like I said…fancy Jell-O Shots.  Here we go.

Pour the tequila into a medium-sized bowl, sprinkle the 2 gelatin packets on top and set that aside.

In a saucepan, bring the margarita mix to a boil.  Then pour the hot mix over the tequila and stir gently until all the gelatin is dissolved.

Pour the mixture into an 8 or 9” pan and refrigerate until it is fully set, probably 2 to 3 hours.

When you’re ready to serve, cut it into small cubes and sprinkle the sea salt on top just before you start handing them out.

These are surprisingly tasty.  Yum!
