Potato Chip Cookies

These shouldn’t work, but go with me…they totally do.    The name says it all – they’re cookies with potato chips inside them, and if you’re one of those people who likes a little salty with your sweet these are perfect for you.    Your hands will get a little greasy making them, but other than that they’re close to the easiest thing in this book.   And they’re one of those things that no one else will be making – they’re not a “typical” or “regular” cookie (not that there’s anything wrong with that!) and it’s a way to feel just a little bit superior about your mad skilz.

Ingredients

·        1 cup butter, room temperature

·        1 cup powdered sugar

·        1 egg yolk

·        1 ½ t vanilla

·        1 ½ cups flour

·        ¾ cup crushed potato chips

·        ½ cup chopped pecans

·        Powdered sugar for dusting


Directions

Beat together the butter and sugar for about 3 minutes.   Add in the egg yolk and vanilla and mix until everything is well combined.   Finally, beat in the flour.IMG_9473

Crush a handful of potato chips like they’re your worst enemy.   Crush them until they’re defeated.   I like kettle chips because they have a little more texture than regular chips, but either is fine.    Make sure to use regular chips…I tried salt and vinegar once just for the heck of it and….let’s just say I did it once.

Stir in the potato chips and pecans with a wooden spoon.

Bake at 350° for about 10 minutes.

While they’re still warm, sift them with confectioners sugar.
