Honestly, I don’t want to work very hard.
But I really don’t want to eat something from the store. (I’m lazy but not that lazy)
So instead I whipped together these really simple chewy chocolate cookies, which I think you’re going to love.
Ingredients
· ½ cup sweetened cocoa powder
· 1 cup sugar
· ½ cup butter, softened to room temperature
· 2 T vegetable oil
· 1 egg
· 3 t vanilla
· 1 1/3 cup flour
· ¾ t baking powder
· ¼ t salt
· 1/3 cup semisweet chocolate chips*
· ¼ cup butterscotch or peanut butter chips (optional)
· Chunky sea salt for sprinkling on the top (optional)
Directions
Throw the cocoa powder, sugar, butter and veggie oil into a bowl and beat with your hand mixer until well combined. Next, add in the egg and vanilla and beat again.Now the dry ingredients. Add the flour, baking powder and salt into the bowl and mix again, just until everything is combined. Put away the hand mixer – that puppy is retired for the rest of this recipe.
Finally, add in the chocolate chips. If you’re so inclined, you can also add in butterscotch or peanut butter chips, which add a nice layer to the flavor. *NOTE – if you add in the ¼ cup butterscotch or peanut butter chips, decrease the chocolate chips to ¼ cup as well. Stir with a wooden spoon until the chips are even spread out in the batter. I went with the peanut butter chips this batch.
That’s it for the mixing.
Place the batter onto cookie sheets lined with parchment paper. 6 cookies to a sheet, with each cookie being about a tablespoon of batter, should do you fine. If you like, sprinkle a little chunky sea salt on top of each cookie.
Bake at 350 for about 13-15 minutes, and let them cool on the cookie sheets for five or so minutes and then transfer them to a wire rack to cool completely.
And that’s absolutely it. I told you they’re super easy! But they taste like you worked your butt off.
These look and sound great! I find it amusing how most of your desserts end up looking appetizing, not “ugly” at all!
