Easy Apple Crisp

 As far as I’m concerned, fruit in dessert is perfection.

You get the bragging points of eating fruit…but in dessert form.  Because let’s be honest – when your mom says “have an apple” for dessert, that is NOT dessert.  That’s medicine.  There is a reason someone came up with the line “an apple a day keeps the doctor away”.

But if you put apples (or bananas or raspberries or lemons or whatever) into a dessert, you can still say you’re eating healthy…I mean, you can say anything you want I suppose…but you get the advantage of dessert-y goodness.

Ingredients

  • 6 cups diced apples (I used a combination of 3 different kinds – Golden Delicious, Honeycrisp and Granny Smith and ended up needing 4 apples to get 6 cups)
  • 3 T sugar
  • ¼ cup dark brown sugar
  • ½ t cinnamon
  • ¼ t nutmeg
  • 1 ½ cups rolled oats
  • 1 t vanilla
  • ¼ cup flour
  • ¼ cup chopped walnuts
  • 6 T butter, softened to room temperature
  • Vanilla ice cream (not required, but c’mon – if you’re having apple crisp you really should have it with some ice cream

Directions

We’ll start with the hardest part which, really, isn’t particularly hard it just takes a while.  Because other than this part this is an incredibly easy recipe.

Peel and dice the apples into cubes and place them all in a bowl.  Like I said above, I used a combination of Golden Delicious, Honeycrisp and Granny Smith.

Ouch. Cutting too fast, plus maybe not paying attention, plus very sharp knife.

Add in the white and brown sugar and stir with a wooden spoon until well combined and set aside.

In a separate bowl throw in the cinnamon, nutmeg, oats, vanilla, flour, walnuts and butter.  Stir with a wooden spoon (again, you can use the same one you used above) until everything is well combined.  Add to the apples and stir again until everything is evenly distributed.

Spread the mixture in a 9” x 13” baking dish and bake at 350 for about 40 minutes or until the oats have started to turn a nice golden brown.

Take it out of the oven and enjoy either warm or refrigerated!

That’s it – super simple and very delicious (dare I say…Golden Delicious??)   Sorry…  😊
