Gingerbread Loaf Cake

It doesn’t have to be December for you to enjoy the taste of gingerbread.  Yeah I know, gingerbread men get all the attention in December, but it’s not like ginger is a seasonal fruit.  And people enjoy ginger snaps all year long…so why not gingerbread, too?  This simple loaf cake is a great way to get your gingerbread fix (plus your kitchen will smell amazing!)

Ingredients

  • 1 ¾ cups flour
  • 2 ½ t baking powder
  • 1 ½ t cinnamon
  • 3 t ginger
  • ½ t nutmeg
  • ½ t allspice
  • ½ t salt
  • ¼ t ground cloves
  • 10 T butter, softened to room temperature
  • 1/3 cup dark brown sugar
  • ½ cup maple syrup
  • 2 eggs
  • 3 T milk

Directions

Butter and flour a loaf pan and set it aside.

Whisk together the flour, baking powder, cinnamon, ginger, nutmeg, allspice, salt and cloves.

In a separate bowl, put the butter and brown sugar and mix until smooth (probably a couple minutes).  Next, add in the maple syrup, eggs and milk and mix again until it’s smooth and everything is well combined.

Slowly add in your dry ingredients and mix until smooth.IMG_4733IMG_4735

Pour your batter into your prepared pan and bake at 350 for about an hour, or until a toothpick inserted in the middle comes out clean.   IMG_4736Move to a wire rack and let it cool in the pan for another 5-10 minutes, then remove it from the pan and let it cool completely on the rack.

Like I said this one is pretty simple and I think you’ll like it!  And I won’t be mad if you serve it with a bit of whipped cream…IMG_4743IMG_4741
