Butterscotch Cookie Bars

 I wanted to make something for a party I was going to but honestly…I didn’t feel like working too terribly hard.  Even so, I wanted to make something good.  I came up with these and they covered both bases!

Ingredients

  • 1 ¾ cups dark brown sugar
  • ½ cup butter, softened to room temperature
  • 2 eggs, brought to room temperature
  • 2 cups flour
  • 1 t baking powder
  • Pinch of salt
  • 3 t vanilla
  • 1 t rum
  • 1 ½ cups butterscotch chips
  • ¾ cups toffee bit

Directions

Butter and flour (or spray) a 13” x 8” pan and set it aside.

Put the brown sugar, butter, eggs, flour, baking powder, salt, vanilla and rum into a bowl and mix until well combined and smooth.

Next, stir in the butterscotch chips and toffee bits.

Pour the batter into your prepared pan and bake at 350 for about 20-25 minutes, or until a toothpick inserted in the center comes out clean.

Move to a wire rack and let it cool completely, then cut into squares and serve.
