For Easter I wanted to make something that included them, and these blondies are the perfect thing – it’s like adding marshmallow to your blondies!
Ingredients
- 1 cup butter, brought to room temperature
- 1 ½ cups brown sugar
- 3 t vanilla
- 3 eggs, brought to room temperature
- 2 ¼ cups flour
- 2 ½ t baking powder
- ¼ t salt
- 1 cup semisweet chocolate chips
- ½ cup butterscotch chips
- 6-7 Peeps (the flat rabbit ones, not the chicks)
Directions
Butter and flour or spray a 13×9 pan and set aside.Put the butter and brown sugar into a bowl and mix until smooth. Next, add in the vanilla and eggs and mix until smooth again. Set this bowl aside.
In a separate bowl whisk together the flour, baking soda and salt.
Add the flour mixture to the butter and egg mixture until everything is well combined, then stir in the chocolate and butterscotch chips (no one will be mad if you’re a little heavy-handed with the chips).
Spread the batter into your prepared pan and bake at 350 for about 20 minutes or until it starts to get a nice golden brown around the edges.
After 20 minutes, take the pan out of the oven and place your Peeps all around the blondies, pressing in slightly. Then, return the pan to the oven for another 5 minutes.
Remove the pan from the oven and move to a wire rack to cool completely. When they’re cool, cut up and serve!
I got a few different color Peeps to make the final dish more colorful. I highly recommend you do the same…then eat whatever you don’t put in the blondies!
