Oreo Bundt Cake

I’ve been going down the Instagram/TikTok recipe rabbit hole lately.  Did you know that the more times you “like” recipes, the more recipes the algorithm feeds you?  Crazy.

Anyway, some of these things are truly whack…and others are inspired.  This one, I think, is inspired.  I played with it a little, just to make some tweaks that I like and I think it came out kind of awesome.  Give it a try!

Ingredients

  • 25 Oreo cookies
  • 4 eggs, brought to room temperature
  • ½ cup milk
  • ½ cup sugar
  • ¼ cup vegetable oil
  • ¼ cup butter, brought to room temperature
  • ½ cup flour
  • 1 T baking powder
  • 2 t vanilla
  • 1 cup semisweet chocolate chips
  • 1 cup butterscotch chips

Directions

Spray or butter and flour a bundt cake pan and set it aside.

Put your Oreos and eggs into a food processor or blender.  I don’t have a food processor big enough to handle all that, so blender it is!IMG_5900

Mix until well combined and then pour your mixture into a bowl.IMG_5902

Add the milk, sugar, vegetable oil and butter and mix everything together until just combined.  Next ad in the flour and again mix until just combined.  Add in the baking powder and vanilla and, you guessed it, mix until just combined.IMG_5903

Pour in your semisweet and butterscotch chips and stir until well distributed.

Pour the batter into your prepared bundt pan and bake at 350 for about 40-45 minutes or until you can insert a toothpick and it comes out clean.

Ok, I clearly missed a spot when I was oiling the bundt pan…

Move the pan to a wire rack and let it cool in the pan for about 10 minutes, then remove it from the pan and let it cool completely on the wire rack.  Slice and serve!

Now, you can add a glaze or powdered sugar if you want, but you definitely don’t need to.  Though a little ice cream on top of a slice?  Heck yes!IMG_5910a

    This cake looks amazing and so easy..I’m going to make it gluten free for my family using gluten free Oreos & 1-1 gluten free flour..

      Let me know how it turns out!! It really is easy, and at least made the gluten way it’s amazing. I’d love to hear how the gluten-free version turns out!!
