I was at a street fair recently and got a rose’ frose’ drink. The drink…not great. But they covered it in sprinkles (possibly to hide the taste), and everything was good! But I digress. These cookies have been popular forever and I thought it was about time I made a version for myself. And you know what? In addition to being fun, they’re also delicious. Put the butter and two sugars into a larger bowl and mix until fluffy. Next, add in the egg and vanilla and mix again until well combined. Get the bowl with the dry mixture and add it, a bit at a time, until everything is well combined. When I made this recipe, I didn’t have traditional sprinkles at home (I know, shocking – I had a bunch of Christmas sprinkles, but I made these in July). What I did have were sprinkles mixed in with those little balls of candy. It’s maybe not what is traditionally used for these cookies but who cares? It worked! Place golf ball-sized balls of dough onto cookie sheets lined with parchment paper, 6 to a sheet. Move the sheets to the fridge for about a half hour, then take them out and bake them at 350 for about 7-10 minutes. They’re done when the tops are starting to get a little golden brown. Leave the cookies on the sheet for 5 minutes so they can set, then remove them and put them on a wire rack to cool completely. Makes about 20 cookies!Ingredients
Directions
In a small bowl, put the flour, cornstarch, baking soda and salt and whisk together until well combined. Set aside.
Grab your ½ cup of sprinkles and gently fold them into the batter (don’t mix it with a mixer or the sprinkles can break up).
