Butterfinger Cake Bars

I’ve said before, I’m not a huge candy eater, but I do love using candy as an ingredient in cakes and cookies.

This recipe uses a handful of Butterfinger candy bars, along with a bunch of other good stuff, to make a cookie/cake-like version of the Butterfinger bar.  If you like Butterfingers, you’ll love these.  If you don’t…why are you still reading this??

Ingredients

  • 1 box dark chocolate cake mix
  • 1 box (3.9 oz) chocolate instant pudding mix
  • ½ cup milk
  • ½ cup butter, brought to room temperature
  • 1/3 cup vegetable oil
  • 2 t vanilla
  • 2 eggs, brought to room temperature
  • 1 ½ cups smooth peanut butter
  • 6 Butterfingers, separated
  • 1 ½ cups semisweet chocolate chips, separated

Directions

IMG_6899Whisk together the cake and pudding mixes in a large bowl and set aside.

In a smaller bowl pour the milk, butter, vegetable oil and one of the eggs and whisk until the butter is melted and everything is well combined (I zapped the butter in the microwave first to give it a head start in melting).

Take your wet ingredients and pour them into the bowl with the dry ingredients.  Mix until combined, then add in the vanilla and the second egg and once again mix until combined.  Finally, add in the peanut butter and mix again until well combined.

Roughly chop 4 ½ of the Butterfingers and stir them along with a cup of the chips into the batter until they are well distributed.IMG_6900

Grease a 9” x 13” baking dish and pour the batter in there.  Chop up the remaining 1 ½ Butterfingers and sprinkle them along with the remaining half cup of chips over the top.IMG_6903

Bake at 350 for about 25-30 minutes, or until it starts to crisp around the edges and a toothpick inserted in the middle comes out dry.IMG_6904

Move the pan to a wire rack to cool completely, cut into bars and enjoy!!IMG_6908
