Chocolate Chip Mug Cake

 I’m starting to really enjoy mug cakes – they’re quick and easy and you don’t have to eat an entire cake, it’s one of the few desserts that’s just a simple single serving!

This one is basically a version of my chocolate chip cookie and it is super easy and super delicious.

Ingredients

    • 1 T butter
    • 1 T sugar
    • 4 t dark brown sugar
    • ¼ t vanilla
    • Pinch of salt
    • 1 egg yolk
    • 3 T flour
    • 1 T semisweet chocolate chips *
    • 1 T butterscotch chips *
    • 1 ½ t toffee bits *
  • You can freelance here – make them all chocolate chips, all butterscotch chips, eliminate the toffee bits if you don’t have them…it’s really up to you.

Directions

Step 1:  get a coffee mug.  Just make sure there’s no metal on it, cuz it’s going in the microwave.IMG_7839

Put the butter in the mug and zap for a little until the butter is mostly melted.

Next, add the sugars, vanilla and salt and mix with a spoon until combined.  Next add in the egg yolk and flour and mix again with your spoon until everything is well combined.

Finally, add in your chips and toffee bits and stir until they are well distributed.IMG_7840

Put the mug back in the microwave and cook for about a minute, or until the cookie cake is nice and puffed up, and looks dry.  Take it out, let it cool for a minute or two and enjoy!  I’ll tell you, it doesn’t look like much, but it tastes terrific!IMG_7841
