These coffee brownies absolutely reinforce my opinion that coffee belongs in baked goods…not in a cup. But if you want to enjoy a cup while you’re also enjoying these I won’t be mad. Melt the chips and butter together in a small bowl. I used a double boiler over the stove but you can also use the microwave. Either way, watch it carefully and stir frequently so the chocolate doesn’t seize (which is gross and just a waste). In a large bowl add the eggs, brown sugar and sugar and mix for a few minutes (3-4) until smooth. In a small bowl add the coffee granules and water and stir until the granules are melted. I used a tiny whisk, but you can also just use a fork. Add the coffee mix to your main bowl and stir until it’s well combined. Pour the batter into your prepared pan and, if you’re doing it, sprinkle the salt over the top. Bake at 350 for about 25 minutes or until the edges are nice and crisp and the middle is set. You can use the toothpick test on this one, but in this case it’s ok if it comes out chocolatey – you want to make sure the middle is just a little bit soft, not completely runny (which would mean it’s still raw). The whole tin will set after it’s taken out of the oven. Move the tin to a wire rack to cool completely. These will be pretty rich so cut them into small pieces and enjoy! Directions
Spray or butter and flour an 8 or 9” tin and set it aside.

Add in your butter and chocolate and stir (don’t mix) until just combined. Set this bowl aside.
Add in the flour, cocoa powder and salt and do the same, until the mixture is well combined.

Rich Coffee Brownies
I’m not a big coffee drinker – in fact I don’t drink it at all. But I am a fan of adding coffee flavor to desserts. I dunno, it just seems to work so, so well with chocolate.
