This is super easy to make (as are a lot of the best desserts…tho I’ll admit not all!), and it was definitely a hit around here.
Ingredients
- ¾ cup sugar
- ¼ cup flour
- Pinch of salt
- 3 cups milk (I used 1%, but your call)
- 3 eggs, brought to room temperature
- 3 t vanilla
- 4 large bananas (ripe but not overripe)
- 75 (ish) vanilla wafers, separated
Directions
Put the sugar, flour salt and milk into a saucepan and whisk together until well combined.Move the saucepan to a medium flame and cook, whisking regularly, until the mixture has started to bubble and has thickened. Turn the heat down to low and whisk continually for an additional two minutes. Remove the pan from the heat.
Break the eggs into a small bowl and whisk together. Pour in a little of the sugar/flour mixture (about a quarter cup but the exact measurement isn’t important) and whisk again until well combined.
Pour this mixture back into the saucepan and whisk again until everything is well combined. Let this mixture sit and cool for about 10 minutes, while you prepare the pan.
Slice your bananas.
Get an 8” or 9” pan and line a layer of vanilla wafers along the bottom. (I liked the pan with aluminum foil first so it would be a lot easier to clean) Next, add a layer of banana slices over that, and then pour half of the saucepan (pudding) mixture over that.
Now we’re just going to repeat that process – another layer of wafers, another layer of banana and the rest of the pudding mixture.
Cover the whole pan with plastic wrap. In this case, the wrap should actually touch the pudding – this will keep it from forming a film over it while it sets. Refrigerate the pan for at least 4 hours – overnight is probably easiest.
When you’re about ready to serve, crush up a bunch of wafers in a food processor. I like a lot of wafer in my pudding so I crushed a ton them, but if you think the two layers of whole wafers you already used is enough then you can use fewer – freelance here and do what feels good. Sprinkle the wafer crumbs over the top of the pan.
Slice up the pudding and serve!
