Ol’ Fashioned Crumb Cake

I love crumb cake, and if you follow me you also probably know I love dessert for breakfast.  I brought this to an event, so I made it in a 13”x9” disposable tin, and let’s just say I didn’t have any crumb cake to bring home.

Which was of course the idea…but I was still disappointed!

Ingredients

  • 1 ¾ cups flour
  • 1 cup + 1 T dark brown sugar
  • 1 cup + 1 T sugar
  • 1 t nutmeg
  • 1 t allspice
  • ½ t salt
  • ¼ t cloves
  • ¾ cup vegetable oil
  • 2 t cinnamon
  • 3 t vanilla
  • 1 ¼ t baking soda
  • 1 egg, brought to room temperature
  • 1 ¼ cups buttermilk

Directions

In a large bowl add your flour, brown sugar, sugar, nutmeg, allspice, salt and cloves and whisk together until well blended.  Add in the vegetable oil and mix until combined.IMG_9041

Take out ¾ cup of this mixture and add it to a separate bowl.  Stir in one teaspoon cinnamon (I used a fork) and set that aside – this will eventually become your topping.IMG_9042

Go back to your original bowl and add the remaining teaspoon cinnamon along with the vanilla, baking soda, egg and buttermilk and mix together until just blended.IMG_9043

Butter and flour or spray a 13” x 9” pan and pour this mixture into it.

Get your second bowl and sprinkle this mixture over the top of the pan, as evenly as you can. IMG_9048 Bake at 375 for about 30 minutes, or until a toothpick inserted in the center comes out clean.

Move the tray to a wire rack and let it cool completely there.IMG_9052

This isn’t particularly fancy but it’s easy to make, INCREDIBLY moist and easy to love!IMG_9061
