Which was of course the idea…but I was still disappointed!
Ingredients
- 1 ¾ cups flour
- 1 cup + 1 T dark brown sugar
- 1 cup + 1 T sugar
- 1 t nutmeg
- 1 t allspice
- ½ t salt
- ¼ t cloves
- ¾ cup vegetable oil
- 2 t cinnamon
- 3 t vanilla
- 1 ¼ t baking soda
- 1 egg, brought to room temperature
- 1 ¼ cups buttermilk
Directions
In a large bowl add your flour, brown sugar, sugar, nutmeg, allspice, salt and cloves and whisk together until well blended. Add in the vegetable oil and mix until combined.
Take out ¾ cup of this mixture and add it to a separate bowl. Stir in one teaspoon cinnamon (I used a fork) and set that aside – this will eventually become your topping.
Go back to your original bowl and add the remaining teaspoon cinnamon along with the vanilla, baking soda, egg and buttermilk and mix together until just blended.
Butter and flour or spray a 13” x 9” pan and pour this mixture into it.
Get your second bowl and sprinkle this mixture over the top of the pan, as evenly as you can.
Bake at 375 for about 30 minutes, or until a toothpick inserted in the center comes out clean.
Move the tray to a wire rack and let it cool completely there.
This isn’t particularly fancy but it’s easy to make, INCREDIBLY moist and easy to love!
