Spice Cake with Maple Frosting

Sometimes it’s nice to be able to whip up something quickly, but still get a serious burst of flavor out of it.  That’s absolutely what this recipe does!  It’s simple but very flavorful.

Ingredients

Cake

  • 1 ¼ cups flour
  • 1 cup dark brown sugar
  • 1 t baking soda
  • 1 ½ t cinnamon
  • ¾ t cloves
  • ½ t nutmeg
  • ¼ t salt
  • 1 T vanilla
  • 1/3 cup oil
  • 1 T white vinegar
  • 1 cup water

Icing

  • ¼ cup butter
  • ½ cup dark brown sugar
  • 2 T milk
  • 2 T maple syrup
  • 1 t vanilla
  • 1 ½ cups powdered sugar

Directions

Butter and flour (or line with foil) an 8” or 9” pan and set it aside.

Whisk together the flour, brown sugar, baking soda, cinnamon, cloves, nutmeg and salt.  Add in all the wet ingredients (vanilla, oil, vinegar and water) and mix until well blended.

Pour the batter into your pan and bake at 350 for about 30 minutes or until it’s golden brown on the edges and a toothpick inserted in the middle comes out clean.

Move to a wire rack to cool completely.

When the cake is cool you can make your icing, which is pretty easy.

Put the butter and brown sugar in a small saucepan and heat on low until the brown sugar has melted.  Add in the milk, maple syrup and vanilla and stir until that is well combined.  Take the pan off the heat, add in the maple syrup, vanilla and powdered sugar and stir until it’s all combined. 

Let the icing cool for a few minutes to firm up a bit, then pour your icing on the cooled cake and refrigerate until you’re ready to enjoy!
