Chocolate Chip Cake Mix Cookies

Ok, here’s the deal.  Sometimes you want something simple (but still awesome!), right?  These fit that bill.  The prepackaged cake mix does the heavy lifting here, all you have to do is throw in a few simple things.

And even better, you don’t have to follow what I put in.  You can, but if you like, say, peanut butter chips, or walnuts, or whatever – use those.  You do you and find your bliss.  These cookies will definitely help.

Ingredients

  • 1 box, yellow cake mix
  • ½ cup butter, brought to room temperature
  • 2 eggs, brought to room temperature
  • 3 t vanilla
  • Pinch of salt
  • 1 cup semisweet chocolate chips
  • ½ cup butterscotch chips
  • ½ cup toffee bits (I used Heath Bar bits)

Directions

Throw the first 5 ingredients into a bowl and mix.

Throw in the chips and bits and stir with a spoon (don’t mix – you don’t want to break up the chips).

Cover the bowl with aluminum foil and put it in the fridge for about an hour.  Pat yourself on the back for making the world’s easiest cookie dough…but no one needs to know that.

When you’re ready to bake, heat the oven to 350 and drop about a tablespoon of the dough onto a cookie sheet lined with parchment paper, 6 to a sheet.

Bake for about 12-15 minutes, or until the bottoms and edges are a nice golden brown.

Take the sheets out of the oven, let the cookies cool on the sheets for a few minutes then transfer them individually to a wire rack to cool completely.

Seriously, the easiest (and tastiest) cookies you’ll ever make!  This’ll make about 30 cookies.
