Jam Rolls

Normally I’ll specify what jam I’d recommend but honestly, these are fantastic regardless of what flavor you choose.  You do you, and enjoy!  (FYI I chose Four Fruits from Bonne Maman because it’s my absolute favorite)

Ingredients

    • ¼ cup butter
    • 1 ½ cups flour
    • ½ cup powdered sugar
    • ¼ cup orange juice
    • 1 ½ t baking powder
    • 1 t vanilla
    • 1 cup jam (like I said, I used Four Fruits from Bonne Maman)
    • 1 cup roughly chopped pecans
    • Powdered sugar for dusting*
  • Optional

Directions

First off, melt your butter.  Next, in a large bowl add the butter, flour, powdered sugar, orange juice, baking powder and vanilla.  Mix together.  I started with a hand mixer and finished with my (clean) hands, since the dough gets a little pebbly.

Get your hands in there and shape the dough into a smooth ball.  Roll the dough to about ¼ inch thick and slice it so that you’ve got a rectangle.  Save the dough you cut off for a second rectangle.

Spoon your jam over your dough rectangle.  It shouldn’t be super thick – just enough to get coverage.

Sprinkle a generous portion of chopped pecans over the jam.

Roll the dough into a tube and set it aside.

Next, get the dough you cut off and make another rectangle and repeat all the steps above.

Get your tubes of dough and slice them, placing each piece on a baking sheet lined with parchment paper.

Bake at 350 for about 20 minutes, or until they get to be a nice golden brown.  Remove the cookie sheet from the oven and place the whole sheet on a wire rack to cool completely.

Just before you’re ready to serve, sprinkle powdered sugar over the cookies and enjoy fresh-baked deliciousness!

Makes about 20 cookies.
