No Bake Cookie Balls

Summer is coming and sometimes it’s nice to make something that doesn’t heat up the kitchen.  These are basically little bites of cookie dough, and they’re delicious.

FYI, they use almond flour because you’re not supposed to eat raw white flour.  I know, we all do, but I can’t actually recommend that you do that!

Ingredients

  • ½ cup butter, brought to room temperature
  • ½ cup dark brown sugar
  • 1 t vanilla
  • ¼ t salt
  • 1 cup, almond flour (see comment above)
  • ¼ cup semisweet chocolate chips
  • ¼ cup butterscotch chips
  • 7 ounces of chocolate, for melting (I used Ghirardelli dark chocolate melting discs)

Directions

Super simple.

Add the butter and brown sugar to a bowl and mix until creamy.

Toss in the vanilla and salt and mix again until well combined.

Next, add in the almond flour and mix until smooth.

Finally, add in the chips and stir until they’re evenly distributed.

It’s time to get your hands messy.  Roll the dough into a dozen balls and put them onto a cooking sheet lined with parchment or wax paper. 

Put the sheet into the fridge for about an hour to let the balls firm up, and then they’re ready to eat!  Note – if your dough is too soft to work with, you might need to put the bowl in the fridge for a few minutes so that it can firm up a little first.

Once they cookie balls are firm, melt your chocolate (7 ounces is an approximation – that’s what I used and it was plenty).  Dip the balls into the chocolate and put them back on the cookie sheet.  Once you’re done, put the cookie sheet back into the fridge for about a half hour to let the chocolate harden up.

That’s it!  Makes, well, about 18 or so delicious Cookie Bites and you didn’t have to break a sweat!
