Easy Cinnamon Loaf Cake

I almost called this a one bowl cake, but then I remembered that you need to make a cinnamon sugar mixture and unless you want to do it on the counter, you will need a small second bowl.  But regardless, this cake is super moist and extremely (like extremely) simple to make!

Ingredients

Cake

  • ¾ cup sugar
  • ½ cup butter, brought to room temperature
  • 2 eggs, brought to room temperature
  • 3 t vanilla
  • ½ cup plain or vanilla Greek yogurt
  • ½ cup milk
  • 1 ¾ cup flour
  • ½ t baking soda
  • Pinch of salt

Filling/topping

  • ¼ cup sugar
  • ¼ cup brown sugar
  • 2 T cinnamon
  • Pinch of salt

Directions

Line with aluminum foil or butter and flour a loaf pan, and set that aside.

Throw the sugar and butter into a large bowl and mix until creamy.  Add in the eggs, vanilla, Greek yogurt and milk and mix again until everything is well combined.

Finally, (“finally”…as if you’ve been working really hard up to this point…) add in your flour, baking soda and salt and mix again until just combined.

Set this aside for just a moment to make your filling.  Just put everything in a small bowl and whisk until the brown sugar is mostly broken up and all the cinnamon looks evenly distributed.

Get your prepared pan and pour about half your batter into it. 

Top that with about ¾ or so of your cinnamon sugar mixture.  Try to get it spread out as evenly as possible. 

Pour the rest of your cake batter over that and top that off by sprinkling the remaining cinnamon sugar over it.

Bake at 350 for about 50-60 minutes, or until a toothpick inserted into the center comes out clean. Move to a wire rack to cool , then use the foil to lift the cake out of the pan, slice it up and enjoy!!

As far as I’m concerned, this tastes like it was really difficult to make, and it’s just…not.
