Ingredients
- 2 cups + 1 T flour, separated
- ½ cup toffee chips, separated
- ¼ t salt
- ¼ cup vegetable oil
- 1 ½ cups + 2 T water
- 4 t vanilla, separated
- 1 cup brown sugar
- ¾ cups sugar, separated
- 4 T butter, softened to room temperature
- ½ t cream of tartar
- ½ t baking soda
Directions
In a medium bowl, whisk together 1 cup of flour, ¼ cup of the toffee chips and the salt. Add in the vegetable oil, 2 T of the water and 1 t of the vanilla and mix until everything is well combined.
Butter and flour (or spray) a 10 inch pie plate and put your dough in there, using your fingers to spread it out along the bottom and sides. Set this aside.
In a medium saucepan put your brown sugar, ½ cup of the white sugar, 1 T flour and 1 ½ cups of water. On a low to medium heat, and stir frequently until the mixture starts to boil. Remove from the heat and stir in the remaining 3 t of vanilla. Set this aside as well.
Finally, it’s time for the crumb topping. In a new bowl add 1 cup flour, ¼ cup sugar, the remaining ¼ cup toffee chips, butter, cream of tartar and baking soda and mix until crumbly.
Now it’s time to put everything together.
Pour the contents of your saucepan into your prepared crust. Next get your crumbs and spread them evenly across the pie.
Bake at 350 for about 50-55 minutes or until the topping has browned and the filling no longer jiggles. Move to a wire rack to cool completely. Slice and serve!
