Cardamom Cookies

I’ll be honest, I’m not sure I’d ever even heard of cardamom until I started watching The Great British Bake Off.  They sure do use a lot of it there.  So, I figured I’d give it a shot myself.  It’s pretty strong, kind of minty and almost pine tree-like.  I read that it pairs well with citrus so I included some of that here.

I wasn’t sure how it would all work, but I was very happily surprised – now that I have some in my cupboard I think I’ll try other desserts with it!

Ingredients

  • 2 ¼ cups flour
  • 2 ½ t cardamom
  • 1 ½ t baking soda
  • Pinch of salt
  • ¾ cup butter, brought to room temperature
  • ½ cup sugar
  • ½ cup dark brown sugar
  • 1 egg, brought to room temperature
  • ¼ cup molasses
  • 2 ½ t lemon juice
  • 2 ½ t vanilla

Directions

In a small bowl, whisk together your first four dry ingredients – flour, cardamom, baking soda and salt and set that aside.

Put your butter in a large bowl and beat until nice and fluffy.  Add in both the sugar and brown sugar and beat again until smooth.

Next, add in the egg, molasses, lemon juice and vanilla and mix until well combined.

Finally, grab your small bowl and slowly add the dry ingredients until everything is smooth.

Put the dough in the fridge for about a half hour to let it firm up a bit.

Once you’re ready to bake, line your baking sheets with parchment paper and place ping pong ball-sized balls of dough onto the sheets, 6 to a sheet.

Bake at 350 for about 10 minutes, or until the edges start to get a bit golden brown.

Remove the sheets from the oven and let the cookies set on the sheets for a couple minutes and then transfer them to a wire rack to cool completely.

Makes about 3 ½ dozen cardamom cookies!
