Regardless, make this one! You and everyone you feed will be happy you did!
Ingredients
Cake
- 1 cup butter, brought to room temperature
- ½ cup dark brown sugar
- ¼ cup powdered sugar
- 1 egg, brought to room temperature
- 3 t vanilla
- 1 ¼ t cinnamon
- 2 ½ cups flour
Filling
- ¾ cup dark brown sugar
- 3 T butter, brought to room temperature
- 3 T flour
- 2 t vanilla
- 2 t cinnamon
Icing
- 1 ¼ cup powdered sugar
- 1 ½ t vanilla
- 1 t cinnamon
- 1 T milk
Directions
As you can see above, this one has 3 components, so it will take a little bit longer than most but don’t worry! It’s actually really simple and the results are fantastic.We’ll start with the cake.
This is just a little mixing. Put your butter, brown sugar, powdered sugar, egg and vanilla into a bowl and mix until smooth. Next, add in the cinnamon and mix again until that’s well combined. Finally, slowly mix in the flour until everything is well combined. (The only reason I say “slowly” is so that the flour doesn’t go flying all over your kitchen!)
Ok, this next part is a little tricky.
Line an 8” square baking pan with parchment paper, with hangover on two sides.
Take half your dough and line the bottom of the baking pan with it.
Then, grab the parchment paper hangovers and lift the dough out of the pan.
Next, flour and butter or spray that same 8” baking pan and put the remaining half of the dough into it. Set both this and the dough on the parchment aside.
In a small/medium bowl add all the filling ingredients (brown sugar, butter, flour, vanilla and cinnamon) and mix until well combined.
Get your baking pan and gently sprinkle your filling over the cake batter in the pan. Next, get the dough that is sitting on the parchment paper and place that over the filling.

Bake at 350 for about 35-40 minutes or until the top is a nice golden brown.
Take the cake out of the oven and move to a wire rack to cool completely. Once it’s cooled you can ice it.
Add all your icing ingredients (powdered sugar, vanilla, cinnamon and milk) to a small bowl and mix until smooth. If the icing is too runny, add some more powdered sugar and if it’s too thick, add more milk (but in the case of the milk you’d be surprised that a little goes a LONG way, so add it a very little bit at a time).
Once your icing is done, smooth it over your cake and let it set (putting it in the fridge for a half hour will do the trick nicely). Then, just slice, serve and enjoy!!
