Coffee Cake Mug Cake

I love me a good coffee cake, but sometimes baking a whole one is too much.  This solves that problem – easy, warm, coffee cake for one!!  It’s also fun writing this out because the portions are so much smaller than most bakes – I always feel like I’m making a typo.

Ingredients

  • 5 T flour, separated
  • 3 T dark brown sugar, separated
  • ½ t cinnamon, separated
  • 1 ½ T butter, brought to room temperature, separated
  • 1 t vanilla, separated
  • 3 T milk
  • ¼ t baking powder

Directions

In a small bowl add 4T flour, 2T brown sugar, ¼ t cinnamon, 1 T butter, ½ t vanilla and all the milk and baking powder.

Stir this until the butter is melted and the mixture is smooth.  This is your cake batter – set it aside.

Next we’ll make the streusel topping because everyone knows that the key to a great coffee cake is definitely the topping.

In a separate small bowl mix the remaining ingredients:  1 T flour, 1 T brown sugar, ¼ t cinnamon, ½ T butter and ½ t vanilla.  Mix with a fork until crumbly (you might want/need to use your fingers for this – you want it to end up looking like little pebbles.)

In a microwave-safe coffee mug (perfect for a coffee cake!) pour or spoon in half your cake batter.  Next layer over that half of the streusel topping, followed by the second half of the cake batter and finally the second half of the streusel topping.

Put the mug in the microwave for about a minute 15 to a minute 30 (it’s quick).  You’ll know it’s done when the cake has risen and the center is set and no longer liquidy.

Let the mug sit for a couple minutes to cool.

And that’s it!  Grab a spoon and eat it right from the mug and enjoy!!
