Peanut Butter Squares

I prefer chewy cookies and bars to crunchy ones (though crunchy can be good, too!).  Peanut butter makes these just chewy deliciousness.  Plus, they’re ridiculously easy to make

Ingredients

  • ½ cup butter
  • ½ cup peanut butter
  • 1 cup sugar
  • ½ cup brown sugar
  • 1 cup flour
  • 2 t vanilla 
  • 2 eggs, brought to room temperature
  • ½ cup peanut butter chips*
  • ½ cup semisweet chocolate chips*

* Optional, but fun

[/recipe-directions]Put the butter and peanut butter into a microwave-safe bowl and heat in the microwave on low until just melted.  Stir together.

Add in the sugar, brown sugar, flour and vanilla and beat until just combined.

Next, add in the eggs one at a time, beating after each one.

That’s it for the mixing – this is your batter!

Butter and flour or spray a 9” x 13” pan and spread the batter evenly in it.  If you’re adding the peanut butter and/or chocolate chips like I did, stir them into the batter before you put it in the baking pan.

Bake at 350 for about 25-30 minutes, or until the edges and top start to get a nice golden brown.

Take the baking pan out of the oven and move to a wire rack – let it cool completely, then cut into squares (or bigger bars!) and enjoy!
