Blondies

Blondies.   They’re essentially brownies but…not brown.

But like brownies you can pretty much put whatever in them:  nuts, toffee, different kinds of chips.  This recipe is just what I like to put in them – feel free to freelance your bad self and go wild.   Like maple syrup?   Throw some in there – yum!  Bacon?   Sure, why not.  Fish?  NO, just no.  I mean seriously.   What is wrong with you?

Ingredients

·        2 ¼ cups flour

·        2 ½ t baking powder

·        ¾ t salt

·        ¾ cup butter, softened to room temperature

·        1 ¼ cups sugar

·        1 ¼ cups brown sugar

·        2 t vanilla

·        3 eggs

·        1 cup semi-sweet chocolate chips

·        1 cup butterscotch (or white if you don’t have that) chips.   Or all semi-sweet.   Seriously – whatevs. 

Mix the flour, baking powder and salt together.  Put to the side

Beat the butter, white sugar, brown sugar and vanilla until well blended.   Then, beat in the eggs until they’re just blended.

Next, pour the flour mixture into the butter mixture and mix with a wooden spoon until that’s all blended.   Finally, add in the semi-sweet and butterscotch chips and mix them until blended.

I don’t have a lot of self control. Batter tasty – me eat.
Pour the mixture into a greased 10” x 15” pan (or closest size you have).    If you’d prefer, instead of greasing the pan, line the pan with aluminum foil.   Then, after it’s cooled you can just lift the whole thing out.

Cook at 350 until the edges start to get brown, around 20 – 25 minutes.   Remember if you use a smaller pan you’ll need to cook it longer.

Cool in the pan, on a wire rack.   These make really tasty bars, and like I said you really can put anything in them.
