Ugly Advice – Substitutions. Don’t. Just…Don’t.

UGLY ADVICE - DON'T SUBSTITUTEI’ve had people tell me that they tried a recipe, but they didn’t have white flour so they used wheat flour, they didn’t have powdered sugar so they used regular sugar and they only had 3 eggs in the fridge so they used them and a little butter instead of the 4 eggs the recipe called for.  But other than that they followed the recipe EXACTLY!

And then the recipe didn’t turn out right…so of course it was a TERRIBLE RECIPE and I don’t know what I’m doing.

Uh Huh.

I’m not saying you can never substitute, and you’ll see some recipes where that’s allowed or even encouraged.  But in general do this at your own risk…and don’t blame the recipe if you do substitute and it doesn’t turn out the way you expected it!

Especially with a new recipe.  Once you’ve made something a few times and you’re comfortable with it you can start to freelance.  But first master the recipe, THEN get creative!
