Spiced Walnuts

Or you can call them candied walnuts, whatever.  This is my mom’s recipe, and I love it.   It’s really simple to make, it makes a LOT, and it’s really good.   I use walnuts, but you can use pecans if you’d prefer.   Basically any nut, really.    Because face it – sometimes you feel like a nut.   A note covered in delicious cinnamon and sugar…

Ingredients

·        ¾ cup sugar

·        1 t salt

·        1 t cinnamon

·        1 lb walnut halves

·        1 egg white

·        1 t water

Directions

Mix the sugar, salt and cinnamon in a bowl

Mix the egg white and water in a second bowl, and whisk it until it’s kind of frothy.   Put the walnuts into this bowl and mix until they’re coated and look kind of shiny.

Pour the dry mix on top of the coated walnuts and mix some more until they’re totally covered.

Spread the walnuts onto a cookie sheet.   Basically, one pound of walnuts covers one whole sheet.  Put it in the oven at 225°.   It’s so low because you’re not really cooking these so much as drying them out.   You’re going to have them in there for an hour, and every 15 minutes turn them with a spatula.

After an hour, just take them out and let them cool on the cookie sheet.    If you eat one right out of the oven it will be a little mushy – wait until they’re completely cool.   They’ll be crisp and delicious.
