Brownie Cookies

Brownies but in cookie form!  So, basically, round instead of rectangular, and with more edges for those of you who prefer brownies from the edge of the tin.

These are super easy and really are a close relative of brownies.  Prepare your mind to be blown.

By the way, you can also add walnuts to these if you want.  I didn’t because I don’t like walnuts in brownies and these are my brownies.

But if you do, use like a cup of them.


·        1 cup flour

·        1 t salt (I used my vanilla-infused Alaskan Sea Salt cuz I love it, but regular salt is just fine)

·        ½ t baking powder

·        1 bag semi-sweet chocolate chips (12 oz)

·        ½ cup butter

·        1 cup sugar

·        3 eggs

·        2 t vanilla


This is a 3-bowl-job here.

In a bowl, whisk together the flour, salt and baking powder and set that aside.

I love this stuff!!!

In a second bowl, put the chocolate chips and butter and melt them on the stove in a double boiler.  If you’re not familiar with that, it’s super simple.  Take a small saucepan and put a little water in it.  Put the bowl on top of the saucepan, but don’t let it touch the water – we’re going to let the steam melt everything.

Turn the burner onto low and heat the water under the bowl, stirring regularly.  When the chips and butter are almost but not completely melted, take the bowl out of the sauce pan and continue stirring until they’re totally melted.  Set this bowl aside.


In a third bowl, put the sugar and eggs and mix with your hand mixer until it’s thick and yellow-y.  This will take maybe 2-3 minutes.

IMG_1643Add in the melted chocolate and the vanilla and mix again until everything is well combined.


Add in your flour mixture and mix that until it’s all well combined, and there’s your dough.

IMG_1650Put this bowl in the fridge for at least a half hour to harden a bit (but you can do it overnight if you want).  Clean the other bowls while you’re waiting, otherwise you’ll get ants and no one wants that.

Put on baking sheets lined with parchment paper and bake at 350 for 15 or so minutes or until the tops are kind of crackled.  You should probably do 6 to a sheet, because these will spread a bit.


Take the cookies out of the oven and let them cool on the sheets for a few minutes before transferring them to a wire rack to cool completely.  This should make about 24 or so delicious, delicious cookies.
