Lemon Crinkles

 I’ve always thought crinkle cookies look really cool and fancy.  But the secret is…they’re really not difficult to make.  You make the dough, bake the cookies and the crinkles happen on their own.  It’s like magic.  Sweet baking magic. 

But feel free to tell everyone how hard you worked on making these.

Ingredients

  • ½ cup shortening
  • 1 cup dark brown sugar
  • 1 egg
  • 1 t vanilla
  • 1 ½ t lemon juice
  • 1 T lemon rind
  • 1 ½ cups flour
  • ½ t baking soda
  • ¼ t salt
  • ¼ t allspice
  • ½ cup powdered sugar

Directions

These are super simple – here we go!

Put the shortening, brown sugar, egg, vanilla and lemon juice in a bowl and mix until well blended.  Add in the lemon rind, mix that in with a wooden spoon and set this bowl aside.

In a separate bowl, pour the flour, baking soda, salt and allspice and whisk until well blended.

Add the flour mixture into the lemon mixture and stir again with your wooden spoon until everything is well blended.

Pour the powdered sugar into a small bowl.

Roll the dough into balls about the size of golf balls, dip the balls into the powdered sugar and place on a cookie sheet lined with parchment paper, six to a sheet.

Bake at 350 for about 10 minutes, until the cookies start getting slightly golden brown on the edges.  Remove the sheet from the oven, let the cookies cool on the sheet for a couple minutes and move them to a wire rack to cool completely.

Makes about 18 delicious, lemony cookies.
