Mom’s Cranberry Nut Bread

 My mom is a great cook, and one of the things I learned from her is that not everything that tastes good has to be super complicated.  This recipe is a prime example of that – just a couple bowls and a pan, easy mixing, not a lot of “process” to the whole thing…but dang does it taste good!

Ingredients

  • 2 cups flour
  • 1 cup sugar
  • ½ t salt
  • ½ t baking powder
  • 2 oranges (you’ll need ½ cup of juice and the rind from both of them)
  • 1 egg
  • 2 T hot water
  • 2 T butter (melted)
  • 1 ¼ cup cranberries
  • 1 cup chopped walnuts

Directions

Put the flour, sugar, salt and baking powder into a medium bowl and whisk until everything is very well combined and set that aside.

Next, take your oranges and grate them – save the rind because you’re going to need it soon.  Then cut the oranges in half and juice them until you have a half cup – set both of the juice and rind aside as well.

In a separate, large bowl, crack the egg and whisk it, then add in the ½ cup orange juice, hot water and the melted butter and stir to combine.

Add the dry ingredients to the wet ingredients and stir until well combined.  Then, add in the cranberries, chopped walnuts and the grated rind from both oranges.  You can do all this with just a wooden spoon – you won’t need a mixer of any kind.

Pour your batter into a loaf pan that you have buttered and floured, and bake at 325 for 1 hour, until the top is nice golden brown.  Slice and serve!
