Pokies

There is a little bakery near my house that makes the best cookies.  And when I say little, I mean TINY – it fits one, maybe two people at once and honestly that’s it.

But they make great cookies and one of my favorites is called the Pokie.  It’s really just a chocolate chip cookie that has chocolate chips and m&ms, but they are soooo good.  So I decided to make some for myself.  Mine are a bit smaller than the ones they make…but yours don’t have to be.

Ingredients

  • 1 1/8 c flour
  • ½ t baking soda
  • ½ t salt
  • ½ cup butter, softened to room temperature
  • 6 T cup granulated sugar
  • 6 T cup brown sugar
  • 1 egg
  • 2 t vanilla
  • 3/4 cup, semi-sweet chocolate chips
  • 3/4 cup m&ms

Directions

Whisk together all the dry ingredients – from the flour to the brown sugar.  Next add in the butter, egg and vanilla and mix again until everything is well blended.  Finally, add in the chips and m&ms and stir with a wooden spoon until they’re evenly distributed.IMG_2353

Refrigerate the dough for about an hour.

When you’re ready to bake, roll the dough into balls of dough slightly larger than a golf ball.  Place the dough onto cookie sheets lined with parchment paper, 3 to a sheet.  Bake at 350 for about 8 minutes, or until they get that nice golden brown color.IMG_2374IMG_2375

Let them cool on the pan for a couple minutes then move them to a wire rack to cool completely.

    Yep, these are what I remember as Pokeys. Growing up in Central Pennsylvania in the 60’s and 70’s I had a great aunt who at every holiday would bake up a storm. I and my siblings always got boxes of her homemade cookies and other pastries as well. I specifically remember the Pokeys because of the colorful m&Ms baked into the cookie. Although, she was a very heavy chain smoker which made her baked goods taste a little like nicotine, we didn’t mind. I mean, hey, it was something sweet! R.I.P. Great Aunt Martha…
