Chocolatey Chocolate Cookies

Super easy, puffy chocolate cookies that use a few different types of chocolate for a real chocolatey taste (hence the name).

Because sometimes you need a chocolate fix and don’t really want to work too hard for it.

Ingredients

  • 4 oz. unsweetened baking chocolate (usually a bar)
  • 1/3 cup butter
  • 2 ½ cups semisweet chocolate chips, separate
  • 1 cup sugar
  • 3 eggs, brought to room temperature
  • 3 t vanilla
  • ½ cup flour
  • 2 T dark chocolate cocoa powder
  • ¼ t baking powder
  • Pinch salt

Directions

Chop/break the unsweetened chocolate into small pieces.  Put that chocolate along with the butter and 1 cup of the semisweet chips into a microwave safe bowl and melt them together.  Set aside, but not too far – you’re going to need it shortly.IMG_3918

In a large bowl add the sugar, eggs and vanilla and beat until smooth – probably a couple minutes.  Add in your melted chocolate/butter mixture and once again beat until smooth.

Next, add in all your dry ingredients and mix again until everything is well distributed.  Put your mixer away – you’re done with it.

Pour in the remaining cup and a half of semisweet chips and stir with a wooden spoon until evenly distributed.IMG_3924

Cover your batter and put it in the fridge for at least an hour to chill.

When you’re ready to bake, cover your baking sheets with parchment paper and put ping pong sized balls onto the paper, 6 to a sheet.  Don’t press down on these – we’re going for a kind of domed shape.IMG_3926

Bake at 350 for about 10 minutes, or until the cookies are domed and firmed up.IMG_3927

Let cool on the baking sheets for a couple minutes then transfer to a wire rack to cool completely.  And enjoy!!IMG_3928
