White Chocolate Macadamia Nut Cookies

Full disclosure – I am not a particular fan of white chocolate or macadamia nuts.  But that’s ok!

Especially with the number of desserts I make, it’s better to make some things that maybe I’m not tempted to devour.  I know these cookies are popular so I tried my own spin on them and the taste testers (my friends) agree that they are a hit!

Ingredients

  • 1 ¼ cups flour
  • ½ t baking soda
  • 9 T butter, softened to room temperature
  • 2/3 cup sugar
  • 1 egg, brought to room temperature
  • 2 t vanilla
  • 1 cup macadamia nuts, roughly chopped (to however big you want the pieces in your cookies)
  • 1 cup white chocolate chips

Directions

This is one of my favorite kind of recipes – really, really easy.

Pour the flour and baking soda into a medium bowl and whisk until well combined.  Set aside.

Put the butter and sugar into a large bowl and mix until nice and fluffy – probably a few minutes.  Add in the egg and vanilla and mix again until they are well combined.

Get your flour mixture and add that do your wet ingredients, a bit at a time and mix until just combined – you don’t have to go crazy here, just get it so the batter is a smooth, consistent texture.IMG_8598

Get your macadamia nuts and white chocolate chips and add them to the batter, stirring until they’re well distributed.

Line baking sheets with parchment paper and place golfball-sized globs of dough onto the sheets, 6 to a sheet.  IMG_8602

Bake at 350 for about 10-12 minutes or until the edges and bottoms of the cookies are a nice golden brown.

Take the cookie sheets out of the oven and let the cookies rest there for a couple minutes, then transfer them to a wire rack to cool completely.

Makes about 2 dozen cookies!IMG_8614
