S’Mores Cookie Bars

I love S’mores.  They are absolutely one of my favorite things, and definitely my go-to when there’s a campfire (or, more likely for me, a fire pit…camping is not high on my list of favorite things).

Anyway, I’ve done multiple variations on the traditional S’mores “recipe”, and this is another.  If you love S’mores, you’ll love these!

Ingredients

  • 1 cup, graham cracker crumbs (this is about 8 graham cracker sheets)
  • 1 cup flour
  • ½ t baking powder
  • ½ t cinnamon
  • ½ cup butter, brought to room temperature
  • ¾ cup dark brown sugar
  • 1 egg, brought to room temperature
  • 3 t vanilla
  • 1 jar marshmallow fluff (7-7 ½ oz, depending on the brand, either amount is fine)
  • 1 cup milk chocolate chips (you can use other types like semi-sweet if you prefer, but traditional S’mores are made with milk chocolate so that’s the way we’re going here)

Directions

Butter and flour (or spray) and 8 or 9” square baking pan and set it aside.  I lined mine with aluminum foil then sprayed that.  This guarantees none of it will stick to the bottom of the pan and makes cleaning up easier.  If you haven’t already, crush up your graham crackers into crumbs.

Get a medium bowl and throw the graham cracker crumbs, flour, baking powder and cinnamon and whisk together until their well combined.  Set aside.

In a large bowl, add the butter, brown sugar egg and vanilla and mix until creamy.  This should just take a couple minutes.  Then slowly add your dry mix until everything is fully combined.

Get your prepared pan and lightly press about 2/3 of your dough into the bottom of the pan.

Next, take your marshmallow fluff, put it in a separate container (apparently you’re not supposed to microwave it in the jar) and zap it on low (like 40% power) in 15 second intervals, until its soft and you can pour it out of the container.

Pour your fluff evenly over the dough.  You may need to tilt the pan a bit to distribute it.

Take your chocolate chips and evenly sprinkle them over the marshmallow fluff.

Now, get your remaining dough and take small balls of it, flatten them between your palms and place them over the chocolate chips.  We do it this way because if you tried to push the dough on top it would just push it underneath the marshmallow fluff and we want to create a layer.

Bake at 350 for about 25 minutes, or until the top is a nice golden brown.

Remove from the oven and move to a wire rack to cool completely.  Once it’s cool, cut it into pieces (squares, rectangles, triangles…whatever) and enjoy!!
